Little Diablo Gazpacho

artichoke salsa1 Jar of Little Diablo Mild Artichoke
40  oz. can of peeled, seeded & chopped tomatoes
1 seeded chopped cucumber 
3 Large ripe red bell peppers, seeded & chopped
2 tsp sherry vinegar
4 TSP Olive oil
Pinch of sugar
Salt & pepper

In a food processor put in tomatoes, cucumber, salsa, peppers, vinegar, olive oil . Process for as long as you like until you reach the consistency your prefer.

Stir in sugar and salt and pepper to taste.

Cover & chill for at least 4 hrs before serving.

Ladle into bowls and garnish with fresh cilantro, basil or parsley.  Delicious and refreshing on a hot, summer day!

Chefs tip: 

Chilling dulls the seasoned flavors, to enhance the flavor prior to serving salt and pepper may need to be added again.

You can really add any fresh vegetables you like to this soup. It's a great way to use up your veggies from your highly successful garden.
