Quick and Easy Tortilla Soup

8 cups chicken stock or broth

1 jar Little Diablo Fire Roasted Garlic or Smokin Chipotle Salsa*

1 15 oz can petite diced tomatoes, undrained

1 or 2 large limes, juiced

8 oz can diced green chiles

2 cups cooked chicken, shredded

1/2 cup cilantro, snipped

Salt and pepper to taste

1 cup cold water

1/3 cup flour or masa (corn flour)

 

Combine stock, salsa and tomatoes. Simmer for 10 minutes. Add lime juice, chiles, chicken and cilantro. Heat for an additional 10 in minutes, stirring often. Season with salt and pepper to taste. Increase heat and bring mixture to a very low boil.

Mix cold water and flour/masa until smooth. Stir into simmering soup. stirring until smooth and slightly thickened. Reduce heat and continue to simmer 10 minutes longer. Serve with garnishes.

Garnishes:

Shredded cheese                                               

Pickled jalapeno peppers                                

Diced tomatoes                                                 

Diced avocado

Sour cream

Tortilla strips or chips

 

Putting your garnished into small serving bowls allows people to add what they choose and make it a truly unique experience!

 

*Any flavor of Little Diablo Salsa can be used in this recipe however, by using the garlic or chipotle salsa you have an instant and developed flavor without chopping onions, green pepper and jalapenos and without pressing a bunch of garlic.  The salsa allows this recipe to come together in about 30 minutes. Perfect for busy nights!
